Maddy’s Allgood Summer Salad

When AllGood Provisions sends ColoradoOutsider samples of their High Antioxidant Trail Mix (a savvy, creative blend of cranberries, mulberries, Goji berries, raisins, pumpkin seeds, almonds, and walnuts), the simple thing would be to write about taking it on the trail and how this trail mix is so much better than just about any other option.

It’s AllTrue. But ColoradoOutsider had a moment of inspiration and turned a good thing into a great thing.

Try this AllGood Summer Salad. It will be the tastiest and healthiest summer salad you’ve ever had. Hands down. Guaranteed.

IMG_2619Maddy’s AllGood Summer Salad

Preparation time: 25 minutes or so.

4 servings, at least.

Ingredients:

1 package AllGood High Antioxidant Trail Mix (8 ounces)

1 package bowtie pasta (1 pound, uncooked)

1½ cups celery (about 5 big stalks)

¼ cup onion

¼ cup olive oil

5-6 big leafs of kale **

4 ounces feta (already crumbled works great)

salt and pepper to taste

YUM.

To Do:

Cook pasta according to directions. Drain, rinse with cold water, and toss with a bit of olive oil to avoid congealing.

Chop celery and onion (I like to chop the onion finely.)

Chop kale. ** You can add it to the salad without doing anything to it OR you can toss the chopped kale lightly with olive oil, salt, and pepper and cook for five minutes at 400 degrees. (Watch it closely. You might even want to take it out at three minutes, turn with spatula, and return to oven until it’s slightly crispy.) This method is WAY better and well worth the extra effort, in my opinion.

Combine all ingredients in a salad bowl. Toss. Season with salt and pepper and add more olive oil, if desired. Enjoy!

Nota bene: If you don’t have access to AllGood’s trail mix, substitute 1 cup of slivered almonds and 1 cup of dried, sweetened cranberries. Or, get creative and add whatever nut-fruit combination you like!
